Embark on a sensory journey with our Black Wine Refošk – 2015, meticulously crafted with a 2-week maceration process and aged for four years in used oak barrels. Bottled directly, this wine boasts a moderate 14.5% alcohol content and no residual sugar.

Pairing Recommendations Black Wine Refošk – 2015: Braised Beef Delight

Ingredients:
– 1 kg beef chuck (neck), cut into large chunks
– 1 large onion, diced
– 4 cloves garlic, minced
– 2 carrots, peeled and sliced
– 2 celery stalks, chopped
– 500 ml beef broth
– 250 ml Black Wine Refošk – 2015
– 2 tbsp tomato paste
– 2 sprigs fresh rosemary
– Salt and pepper to taste
– 30 ml olive oil
– Mashed potatoes or polenta for serving

Instructions:
1. Preheat your oven to 325°F (163°C).
2. Season beef chunks with salt and pepper.
3. Heat olive oil in an oven-safe pot over medium-high heat. Sear the beef until browned on all sides. Remove and set aside.
4. In the same pot, sauté onions, garlic, carrots, and celery until softened.
5. Stir in tomato paste and cook for 2 minutes.
6. Add Black Wine Refošk – 2015, scraping up any browned bits from the bottom.
7. Return the seared beef to the pot. Add beef broth and rosemary sprigs.
8. Cover and transfer the pot to the preheated oven. Braise for 2.5 to 3 hours or until the beef is fork-tender.
9. Serve the braised beef over mashed potatoes or polenta, and drizzle with the rich, flavorful sauce.
